Soup has ancient origins, even mentioned in Genesis 25 as "sod pottage," referring to a boiled dish. It was a meal for both the rich and poor, and for the sick and healthy. The word "restaurant" comes from the French "restoratifs," which referred to soups served in 18th-century Paris. French soups often start with a "mirepoix" (onion, celery, and carrots), named after the Duke of Mirepoix. Some popular French soups include bouillabaisse, bisque, and French onion soup. Cajun soups, like gumbo and jambalaya, follow a similar base but swap bell peppers for carrots.
Around the world, soup takes many forms: Jamaican soups like red pea and pumpkin, German soups such as potato and cabbage, and American classics like chicken noodle and tomato soup.
