Gravy, the natural juices released during cooking, dates back to 14th-century French cuisine. It's typically seasoned and thickened with cream, roux (flour), cornstarch, or water.
In the South, biscuits and gravy are a staple, while in Canada, gravy is commonly served over french fries and cheese curds. In India, paneer butter masala is a popular gravy dish, and in the UK, fish and chips are often served with gravy.
