Ingredients:
2 pounds Extra Firm Tofu
1 pound Frozen Spinach (thawed/drained)
1 cup Quick Mayo (OR) Vegan Sour Cream
¼ cup Lemon Juice
¼ cup Cane Sugar
1¼ teaspoon Pink Himalayan Salt (OR) Sea Salt
¾ teaspoon Onion Powder
¾ teaspoon Garlic Powder
Instructions:
Drain excess water from tofu and mash tofu in a large bowl with a potato masher or your hands. Add remaining ingredients then mix well. Add additional salt or sweetener, if needed
